Artichoke is a variety of thistle which produce an eddible flower bulb. Artichoke buds should be harvested before they flower, as they become inedible. Artichokes are tender to the cold, and shoulbe be planted after the risk of frost. Plant in a sunny location and water consistently, they do not like to be drought stressed.
